MANGO RICE

This is the second month of Shhhhh cooking secretly challenge hosted by Priya Suresh and my partner for this month is Prathima Shivraj....She has a lovely Blog and the secret ingredient given by her was Raw papaya and Raw Mango...I used Raw mango and prepared rice....
 INGREDIENTS
Raw mango-Big one
Urad dhall-2tsp
Red chillies-4
Asafotida-little
Rice-1cup
Ground nuts-2tbsp
Coriander to garnish
Oil-2tbsp


METHOD
Cook the rice and allow it to cool for sometime.
Mean while remove  the skin of the mango and scrape it in a carrot scraper....
Take a kadai and with little oil fry the urad dhall and redchillies till it is roasted,add the asafotida and powder it
I n the same kadai add some oil fry the groundnuts, remove it and add the mango scrapings and let it cook fro sometime,add the spice powder,and the cooled rice to this....
Garnish it with groundnuts and coriander

CONDENSED MILK AND MILK POWDER PEDA

And my humble  thanks to PRIYA SURESH
 My partner is SANOLI GHOSH....Who has awesome blog...She posts almost everyday some dish which are very interesting.....The secret ingredients were condensed milk as well as milk powder....So i chose to make some pedas....
INGREDIENTS
Condensed milk one tin
Milk powder -2cups
Butter -3 Tbsp
Cardamom powder-1tsp
Saffron-few(dissolve it in warm milk-1tsp)
Sugar if neceesary 2tsp(But i did not add)
Raisisns or pista
                                       

METHOD:
In a microsafe and a large one take the condensed milk and microwave it for two minutes
Add the milk powder,Saffron mixed in a tsp of milk and microwave it for two to three minutes till it is slightly stiff If you are adding sugar add now
Add the cardamom powder and knead it in to soft dough.
Make small balls and press it with raisin or pista in the middle
Tasty and yummy pedas are ready!!!!

CASHEW MILK CAKE-SUNDAY BRUNCH

Sundays are usually special as i try to make something innovative
INGREDIENTS:
Cashew broken in to small pieces-11/4cup
Milk powder-2cups
Rawa-3/4 cup
Besan-1cup
Sugar-3cups
Cardamom powder-1tsp
Water-1cup
Ghee-1cup


METHOD
Take some ghee in a kadai and fry the rawa,then fry the besan till the raw smell disappears.
Add the cashews and fry for one minute,mix the milk powder to this mixture and transfer in to a vessel.
Add sugar in the kadai with little water so as to immerse the sugar completly and make a thick syrup.
We can just try it on a plate by touching the sugar syrup.Now add the mixture,cardamom powder and the remaining ghee till it leaves the sides of the pan.To test keep it the gas on a sim and test a small portion on a plate.If it hardens then transfer in to a ghee sread plate.Mark thye squares and store it in a tight jar once it is cooled.Very easy and simple and tastes very good!!!!!!

EGGLESS DATES WALNUT CAKE-SUNDAY BRUNCH

Please excuse me for posting the recipe for sunday brunch this late as i was out of station to Mumbai for a wedding.Today being our wedding day baked an eggless cake.This recipe is mu aunty Mohana
INGREDIENTS
Maida-1cup
Dates-12
Figs-5(optional)
Jaggery-1cup(POWDERED)
Oil-1cup
Milk-11/4cups
Baking soda-1tsp
Cinnamon powder-1/2tsp
Cocoa powder-1/2tsp
Instant coffee-1/4tsp
Walnuts,cashews,raisins mixed little powdered-1cup


METHOD:
Soak the dates and figs in warm milk for one hour.Grind it in a mixie,add the jaggery, coffee,cocoa, cinnamonpowder and  oil to it. pulse it for two minutes.In a wide bowl take the maida ,soda mix well.Add the ground mixture to it.Add the nuts and mix well Take a microsafe vessel add a spoon ogf ghee and dust it with flour.Transfer the mixture and bake in micro mode for eight to ten minutes.In between test it with a knife.If it does not stick please stop the baking....Moist,tasty cake is ready

LETS BRUNCH ON SUNDAY-CABBAGE PAYASAM

This is the fourth week sice we have started this sundays brunch.This week special is cabbage payasam
INGREDIENTS
Cabbage shredded very finely-1cup
Saffron-1tsp
Milk-3cups
Sugar-1cup(according to your tasts)
Cardamon powder-1tsp
Cashews fried in ghee-1tbsp
Ghee-1tsp
                     
METHOD:
Take the ghee in a kadai and fry the cabbage till its raw smell vanishes on a slow flame.
Transfer the cabbage in a big bowl and boil it in milk till the milk reduces to half on a slow flame.
Add the saffron by mixing it in warm milk and cardamon powder.
Add the sugar and boil it till all the sugar dissolves and it attains a thick gravy.
Add the fried cashews for garnishing.....
Healthy and tasty kheer is ready!!!!!!

SUNDAYS BRUNCH Week3 POHA (AVIL)LADDOO

I am very happy to be a part of Sunday Brunch hosted by PRIYA AND VEENA.

INGREDIENTS
poha-1cup
Ghee 3tbsp
Sugar-1/2 cup
Elachi powder-1tsp
Cashews-10
Raisins-10
Milk-2tsp

METHOD
Roast the poha or avil on a gas or microwave(1minute)till it is crispy.
Pound it on a mixer like a rawa.
Powder the sugar also well.
Take a kadai add the cashews and raisins,fry it is golden brown,Pour this mixture in to poha and sugar mixture.
Try making small balls,if it is too dry add this milk and make small balls.
Very healthy and tasty!!!!!

LETS BRUNCH ON SUNDAYS_2nd week -MINT OR PUDINA RICE WITH CAPSICUM PANEER

This is the second week posting recipes for SUNDAY BRUNCH hosted by Priya andVeena.
..INGREDIENTS
Mint rice
Rice-1cup
Mint Leaves cleaned and washed-1cup
Peas-1cup
Spice-Cumin,Pepper,Cloves,Cinnamon,-1tsp
GreenchilliesSlit-2
Ghee or oil-2tbs
Amchur-1tsp
Salt to taste
Water-2cups

METHOD
Soak the rice for 10 minutes. Add the ghee in a pan add the spices fry it for one minute add the mint leaves and saute for 2 minutes.Add the amchur,rice and salt and saute for 2 minutes.Add 2cups of water and either pressure cook or on a rice cooker.Very healthy and tasty rice is ready

INGREDIENTS FOR CAPSICUM PANEER
Paneer-1cup(cubed)
Capsicum cut-1cup
Tomatoes cut-2cups
Onions cut-1cup
Cumin powder-1tsp
Coriander powder-1tsp
Amchur-1tsp
Kitchen king masala-1tsp
Garam masala-1tsp
Oil-2tbsp
Water-1cup
Salt to taste

METHOD
Take the paneer and fry lightly for 2minutes,After removing it add the onions and fry for 1 minute,add the spices.Saute for 2 minutes,add the tomatoes salt,and cook till the water evaporates,add the capsicum and cook till it is slightly tender not very soft,add the paneer and some water,cook for two minutes.Garnish with coriander leaves.

SUNDAY BRUNCH-MILK KOZHAKKATAI

This dish is very easy and very healthy as it does not require any oil and jaggery being very good for health.
INGREDIENTS
Rice flour-1cup
Jaggery-1/2cup
Water 1-11/2 cups
Sugar-2tbsp
Salt a pinch
Oil-1tsp 
Cconut milk-2cups
Cashews-1tbasp
Ghee-1/4tsp
                    

METHOD
First boil the water and add the sugar and salt.When it boils add the rice flour.Sometimes you may need little less water as some rice require more water.When it becomes a solid mass add the oil and switch off the fire.Now roll it in to small balls and steam for 5 minutes .
Take a vessel add the jaggery with little water and strain it to remove the dirts.Let it boil for 10 minutes.Now add the steamed kozhakkatais and boil for 5 minutes .Add the coconut milk by keeping the fire slow and let it boil for 2 minutes..Fry the cashews in ghee and garnish it....
Tasty and healthy brunch is ready....

CARROT CAKE

Navarathri Sweet-Just wanted to try carrot cake instead of halwa
 
INGREDIENTS:
Carrot Shredded -I cup
Milk powder-1cup
Cardamom powder-1tsp
Cashew (slightlypowdered)-2tbsp
Ghee-3tbsp
Sugar-1cup
Water just to immerse the sugar

METHOD:
Take the carrot in a microsafe vessel and add the ghee,cashews and microwave it for 7-8 minutes
Add the milk powder to carrot mixture and microwave it for two minutes
In a kadai add the sugar and water,make a thin string consistency on a stove.
To this add the carrot mixture and cook till it is thick and leaves the sides of the pan.
Transfer it in to a greased plate and slice it into a desired shape.

COCONUT AND FENUGREEK DOSA

I am very happy to take part in Magic Mingle#10 hosted by Vaishali.The ingredients were cocnut and fenugreek.So i tried a dosa like a apppam.It turned out very tasty..
INGREDIENTS:
Raw rice-2cups
Coconut scrapings fresh -1cup
Fenugreek seeds 1tabsp
Salt -1tsp
Sugar-1tsp
METHOD:
Soak  rice and fenugreek for two hours.Grind them in to a smooth paste by adding coconut,sugar and salt.
Allow it to ferment for four hours.
Take a appam pan and drop one laddle of  dough  and slide it to all the sides of the pan.Now on a medium flame let it cook till it has cooked well.There was no need of oil and no need to turn it .
Lovely appam like dosas were ready  to eat!!!!!!Serve it some sambhar...

OLIVE OIL BREAD

This entry goes to Blog Hop wednesdays week21 hosted by Radhika and I am a regular member .This time I am paired with http://www.eq-myblog.blogspot.in/2012/07/olive-oil-bread.html hose Blog is just wonderful with many mouth watering recipes.I wanted to try making bread Some how I did not succeed even today as the yeast did not rise well.First I tried with Yeast fro Nilgris and now I tried dried yeast fro Amma nana..Some how it did not rise well at all.
INGREDIENTS:
Wheat flour-2cups
Honey-1Tabsp
Salt-1tsp
Olive oil-4tbsp
Dried yeast 1tabsp
Water-3/4cup
Sugar-1tsp
METHOD:
Mix,flour,salt,oil and honey together.
Take some warm water dissolve the yeast with sugar.
Add this to the flour mixture and make a soft dough.
Allow it to rise.(Mine did not rise for nearly 2hrs)
Then bake it on a Convection mode microwave for30 minutes....
Not very fluffy but soft bread was my result.Please tell me what is the mistake in my preparation?

SESAME AND GROUNDNUT POHA

I am very happy to be a part of Magic mingle#8.This time the ingredients were Jaggery and Sesame seeds.I tried sweet poha as today is krishna jayanthi and Lord krishna is fond of Poha
INGREDIENTS:
Poha-2cups
Jaggery(powdered)-1cup
Sesame seeds-2tsp
Groundnuts-1/4cup
Cardamom powder-1tsp
Ghee-1tsp
Water-2tbsp


METHOD:
Take the poha in a vessel and sprinkle some water to make it soft.Leave it for 10 minutes.Fry the sesame seeds and groundnut in a kadai and powder it coarsely
Add the jaggery in a kadai and remove all the dirt by pouring little water and making it to syrup
Now when the jaggery is quite thick add the poha, cardamom powder,sesame powder and groundnut powder.
Switch off the gas after 10 minutes when it is well mixed add 1tsp of ghee for nice aroma.....
Healthy and delicious poha is ready for a quick snack..

WHEAT FLOUR NAAN WITH MANGO LASSI

Congtats Radhika for completing one year of Blog Hop Wednesdays and I am very happy to announce that I did not miss a single wednesday....This week I am paired with Nalini's kitchen and I tried many of her recipes.She has a wonderful space....I tried mango lassi and wheat flour naan....
INGREDIENTS:
Wheat flour-1cup
Maida-1/2cup
Baking powder-1tsp
Baking soda -1/2 tsp
Oil-1tsp
curd-2tbsp
Salt to taste
Water for kneading

METHOD:
Mix all except water  and make a smooth dough.Leave it for 3hrs.
Now roll it slightly thicker in to naan and cook it on a tawa on slow fire till both the sides are cooked well
Grab it with some beetroot kootu and capsicum salad.....
INGREDIENTS FOR MANGO LASSI
Ripe mangoes-2 
Curd 1cup
Milk-1/2cup
Cardamom powder-1tsp
Pistas for garnishing
SugarOptional(Idid not add)

Method:
Take the puree from the mango and churn in a mixie till they form a smooth texture...
Transfer in to a glass and then garnish it....

CARROT STIR FRY CURRY

Today is the third of Blogging Marathon  #18 hosted by Srivalli and My theme is Dry saute....Carrot as every one knows is very good for health if eaten raw or cooked in the form of curry...Goes very well with rasam rice or sambhar rice....
INGREDIENTS:
Carrot (cut finely)-1cup
Salt to taste 
Turmeric powder1/4tsp
Coconut-1/4cup
Green chilly-1 
Curry leaves few
FOR TEMPERING:
Oil-1tsp
Mustard-1/tsp
Urad dhall-1tsp

METHOD:
Take the cut carrots in a microsafe vessel add some water and cook on high for 5 minutes till they are tender.
Add salt,turmeric powder,cook for one minute.
Strain the water if it is left Pour very little water so that no water is left out and we don't waste the nutrients.
Take a kadai,add the oil ,mustard,when it splutters, add the urad dhall,chily curry leaves,coconut scrapings.....
Add this mixture to the cooked carrots and cook for one more minute...
Healthy and tasty carrot fry is ready to serve!!!!
