TOMATO RASAM

This entry goes to Radhika's - Bloghop wednesday-5It is very interesting to take part in this event as we are paired with someone ,so we are forced to go through others blog where we learn many recipes,their presentation etc.
This week I am paired with Charishma.She has a wonderful blog,the nonvegetarians will enjoy more as there are many recipes.I chose Tomato rasam
INGREDIENTS:
Tamrind-(Iused paste)-1tsp
Tomato-1(chopped)
Rasampowder-(Coriander seeds,chanadal,pepper,cumin,redchilly)
Coriander for garnishing
Turmeric powder-1/2tsp
Hing-1/2tsp
Tur dal-1/4cup
For tempering
Mustard-1tsp
Ghee-1tsp

METHOD:
Boil the tur dal in  apressure cooker for 2whistles ,until the dal is very soft.
Take the tamrind paste,turmeric powder,hing,salt,tomatoand water in a vessel,boil it till the raw flavour disappears.
Rasampowder-Dry roast all the ingredients and powder it coarsely,add it to the rasam.
Take the ghee in a kadai add the mustard.After it splutters add it,Garnish with coriander.
Aromatic rasam is ready to eat with some curry and rice.

RAGI_OATS DOSA

I am happy to take part in this event Health is Wealth-hosted by Deepika sriraman Anand.
Oats as every one knows has lot of proteins,vitaminsand serves us as adietary food.
Ragi is full of protein,many minerals and gives us more strength and does not add to our fat.
Thus a dosa ,a combination of all these does not add fat but all other components.Oil is ued in a very minimum basis ,just to make dosa.
Cumin seeds added to it relieves all gas.
Exercise is very important like cycling which reduces lot of calories,and doing some pranayama will keep the body fit.
INGREDIENTS:
Rice flour-1cup
Ragi flour-1/2cup
Oats-1/4cup
Butter milk-1cup
Cumin seeds-1tsp
mustard seeds-1tsp
Curry leaves few
Salt to taste
Oil-2tsp

METHOD:
Mix rice flour,ragi and oats and buttermilk.
Take a small kadai,add 1/2tsp of oil add the mustard and cumin seeds,make it splutter.
Drop it in the batter,add the salt and curry leaves too..
Add more water and make it like a rawa dosa batter.
Spread it on a tawa like a rawa dosa.,add little oil,cook it on a medium flame .
Crispy and healthy dosa is ready!!!!Serve it with coconut chutney.

CAPSICUM STUFFED ROTI

Wheat flour-1cup
Oil-2tsp
Capsicum-1
Besan-2tsp
Garam masala-1tsp
Turmeric powder-1/2tsp
Salt as needed for both
Water for kneading
Cumin seeds -1tsp
spread the stuffing on this roti
Close with the other roti
Rotis with some boondi on it


METHOD:
Make a soft dough with wheat flour,salt and water.
Slice the capsicum into small pieces,
Take a kadai,add 1tsp of oil,add the cumin seeds.
When it splutters,add the capsicum,salt, turmeric powder,garam masala,fry for two minutes then add besan,fry for another 3minutes.
Roll out two rotis,Stuff the the capsicum in one and cover with the other.,by applying little water around the ends.
Cook it on a tawa with one tsp of oil
Tasty rotis  can be served with only curd. and some boondis on top

MILK KOZHAKHATTAI

INGREDIENTS:
Rice flour-1cup
Jaggery1/2cup
Milk-3cups
Cardamom-3
Water-1cup
Oil-1/2tsp
Salt a pinch
Coconut-1/4cup
Raisins-1tsp
METHOD:
Take the water in a kadai,add the oil,and salt,boil it.
Add the flour and make it a smooth dough.
Cool then make balls.
Boil the milk and drop the ballsin it and boil till the balls are well cooked.
Prepare a jaggery syrup by adding the jaggery and 1/2cup water,boil it till the raw smell of jaggery disappears.
Add this to the milk after cooling the milk slightly as it may curdle when it is boiling.
Add the cardamom powder and some coconut and raisins for garnishing.
Yummy sweet kozhakattais are ready.!!!!

RAVA_QUINOA IDLY

I am very happy to take part in this  Blog hop wednesday 4 hosted by Radhika -Tickling palates.This time I am paired with Ana mika.Her blog is just wonderful with lot of new recipes.I chose this idly as it served me as a breakfast with a slight variation of adding quinoa to it.
INGREDIENTS:
Rava-1cup
Quinoa-1/2cup
Curd-1/2cup
Water-1cup
Baking soda-1/2tsp
Salt to taste



TO TEMPER:
Mustard seeds-1tsp
Urad dal-1tsp
Groundnut-1tbsp
Pepper-1/2tsp
Cumin seeds-1/2tsp
Oil-3tsp
Curry leaves few
METHOD:
Take a kadai,add the oil, and all the ingredients under tempering.
Fry the rava in this oil and then add quinoa and fry for one minute.
Soak this in curd and water such that the batter is like an idly batter.
Leave it for 5 minutes and spread it on a idly mould and serve it with sambhar.

GUAVA -PACCHADI

INGREDIENTS:
Guava-2
Jaggery1/4 cup
Redchilly powder-1tsp
Asafotida-1/4tsp
Salt as reqd.


METHOD:
Cut the guava in to small pieces and microwave high for 6minutes till they are soft.
Strain it  through a  big colander so that all the seeds come out.
Add the rest of the ingredients and microwave it for 5 more minutes.
Super pachadi is ready!!!!

MICROWAVE MILK COCONUT BURFI

INGREDIENTS:
Coconut-1cup
Milk-powder-1/2cup
Sugar-1cup
Milk-4tbsp
Cardamom -3
Almonds for garnishing

METHOD:
Grind the coconut,sugar,cardamom with the milk.
Take a micro safe vessel,add the milk powder and the mixture,mix well
Heat it on high for first 5 minutes and then 5 more minutes till it is slightly dry.
Transfer it on a greased plate and place almonds for garnishing.
Make squares,cool it.
Yummy Burfi is ready.!!!!

PARUPPU URUNDAI MOR KOYAMBU

INGREDIENTS:
Tur dal-1/2 cup
red chillies-3
Hing-1/2 tsp
Curd-1cup
Coconut-1/4cup
Greenchillies-3
Cumin seeds-1tsp
Riceflour-1tsp
Mustard-1tsp
Oil-2tsp
Methi leaves-1/4cup

METHOD:
Soak the dal for 1hr.Add the redchillies,hing,salt and grind it to a coarse paste
Add the cut methi leaves to it
Take a kadai add one tsp of oil,add the above mixture and saute it for 3minutes.
Make balls of it and steam it for 3 minutes.
For morkoyambu:
Grind the coconut,greenchillies,and cumin seeds to a smooth paste,add the rice flour to it.
Tak a vessel and one tsp of oil,add the mustard,add the ground mixture and heat it on a slow fire for5minutes.
Now add the steamed balls and simmer for 2 minutes.
Tasty and healthy,morkoyambu is ready Yummy with rotis,idlies,dosas etc..

RAGI MURUKKU

INGREDIENTS:
Ragi flour-1cup
Urad flour-1/2cup
Besan-1/2cup
Chilly powder-1tsp
Hing-1/2tsp
Sesame seeds-1tsp
Salt as reqd
Water to knead
Oil to fry

METHOD:
Take all the ingredients except oil and water in a vessel.
Take 2tsp of oil in a kadai,heat it and drop this in the flour.
Knead it to a smooth dough.
Take a murukku press and fry this in hot oil.
Crispy murukkus are ready!!!!!

BANANA FLOWER(VAZHAPOO) VADAI

INGREDIENTS:
Cut vazhapoo-1cup
Chana dal-1cup
Redchillies-3
Asafotida-1/2tsp
Salt as reqd.
Oil to fry
METHOD:
Soak the dal for two hrs and add redchillies ,asafotida ,salt and grind it to a coarse paste..
Add the vazhapoo to it.
Flatten like a vadai and fry in hot oil.
Crispy and tasty vadas are ready!!!!

MICROWAVE VERMICILLI PAYASAM

INGREDIENTS:
Vermicilli-1/2cup
Cashew nuts 2tbsp
Ghee-1tsp
Sugar-1cup
Cardamom-2
Milk-2cups
Milk powder-1/2cup

METHOD:
Keep the vermicilli,ghee and cashewnuts in a microsafe vessel and heat it for 2minutes.
Now pour the milk and microwave for 5minutes
Add the milk powder with out any lumps and heat it for 2 minutes.
Crushed cardamom and sugar are added and keep it for 1 minute.
Delicious payasam is ready in ten minutes!!!!!

RAGI SQUARES

INGREDIENTS:
Ragi flour-1cup
Jaggery-1/2cup shredded
Ghee-2tbsp
Cardamom-2

METHOD:
Fry the ragi flour in  ghee,till the raw smell goes off.
Add  the shredded jaggery and cardamom to it,
Let the jaggery melt and after two minutes when it has become like a dough,spread it on a greased plate and mark the squares.
Healthy,tasty ragi squares are ready in five minutes.

GANESH CHATURTI-2011

This is a festival celebrated by many of us in all the states.Before marriage i was in Mumbai where this festival is celebrated in a grand manner for 10 days.In Chennai,each house must be celebrating but not grand like mumbai.My husband usually does this pooja and i make all the neivediyamsand distribute to my neighbour.We always buy small coloured pillayar,wear dhoti decorate it with some ornaments and flowers.On the next day I drop it in the well.
The neivedyams which I made this year were,Sweet modakam,Ellu modakam,salt modakam,Appam,Vadai,Sundal,Idly,Payasam,
INGREDIENTS FOR MODAKAM.
Outer covering:
Rice -2cups
Oil-1tbsp
Pinch of salt
Water-2cups.
METHOD:
soak the rice for 3-4 hrs.Drain the water and grind it to smooth flour(dry).Microwave the flour for 2 minutes.This hint was given on t.v.and the dough turned out to be very well.Heat the water and add oil and salt,make it into asmooth dough.

Stuffing:
COconut scrapings -1cup
Jaggery-1/2 cup
Cardamom-2
Take the coconut and jaggery in a kadai and heat it on a medium fire till it becomes dry add the cardamom.Shape the dough in to modak shape and steam it.
Ellu stuffing:
Fry 1/2 cup of sesame seeds till it splutters.Add 1/4 cup jaggery and blend it into a powder.Add cardamom powder.Shape it to along shape and stuff this ,steam it.
Salt stuffing:
Urad dal-1/2 cup
Mustard-1tsp
Green chillies-2
Curry leaves few
Salt to taste
Oil-1tsp
Coconut-1/4 cup
Soak the urad dal for one hour and grind it  coarsely.Take a kadai add the oil,mustard.After it sputters,Add this mixture make it like usli.Add coconut.Make a round shape of the covering ,add the stuffing then close it like a triangel.steam it.
Payasam;

Vadai
Urad dal-1cup
Green chillies -2
Curry leavesfew
Salt to taste
Oilfor frying
Soak the dal for 2 hrs and grind it to smooth batter,adding the chillies,hing,salt and curry leaves with out adding water.Make  round shape and fry it in oil.
Sundal:
Soak the black chana overnight and pressure cook it for 4 whistles.Drain the water and Take a kadai add one tsp of oil,add mustard,curry leaves,When it splutters,add the chana,salt coriander powder,chilly powder.hing.Add ition of coconut can also be done.
We make Idly with raw rice.Soak raw rice-2cups with one cup of urad dal and grind it to a smooth batter.Allow it to ferment and make soft idlies.
