ONION KULCHA

This is the second entry to Magic mingle#6 and also to Valli"s Indian cooking challenge... May.The main ingredient for magic mingle-coriander and ALL purpose flour.I made a slight change in valli's instead of aloo I used Onion
INGREDIENTS:
All purpose flour-1cup
Baking soda-1/2tsp
Baking powder-1tsp
Curd-1/4cup
Oil-2tbsp
Salt to taste

For stuffing:
Onion-2(cut finely)
Cumin seeds-1tsp
Amchur-1/2tsp
Chilly powder-1tsp
Coriander-1/2cup
Oil-3tsp
Anardhana seeds-1tsp
Salt to taste


METHOD:
Knead all the ingredients and make a soft dough.Allow it to stay for one hour.
Take a kadai add one tsp oil,add the cumin seeds,once it splutters,add the onion,fry till the raw smell disappears.
Add the coriander and  all the spices fry for one more minute.
Roll the dough in to a roti ,stuff with onion and cook it on a slow flame or you can bake it.
Lovely onion kulchas are ready!!!!It can be served with either some vegetables or with curd.

SEMIYA KESARI-Blog hop wednesday week-18

 Thanks to Radhika who is hosting this blog hop wednesdays regularly and ....This time I am paired with Follow foodie blogspot and the space has colourful recipes and healthy one....
I tried medhu vada with a slight variation and semiya kesari....
INGREDIENTS:
Semiya-1cup
Ghee-3tbsp
Sugar-1cup
Water-11/2cups
Cardamompowder-1tsp
Cashew nuts-2tsp

METHOD:
Fry the semiya ,cashews in ghee,add the water .I made this in microwave .So kept for five minutes for it to cook.To fry i kept in high for one minute
Add the sugar and cardamom powder and cook for three minutes.I did not add any colours...it is optional..

Aromatic kesari is ready!!!!!
INGREDIENTS
MEDHU VADA
Urad dhal-1cup
Pepper-1tsp
Green chilly-1
Curry leaves-few
Rice flour1tbsp
Salt to taste
Oil to fry
METHOD:
Soak the dhall for half an hour and grind it with all the ingredientswith out adding much water.
Now fry in hot oil by making a round shape on the palm..
Crispy vadas are ready...

MAGIC MINGLE#6-CORIANDER BALLS

I am very happy to take part in this magicmingle for the sixth time...This time the ingredients are All purpose flour and coriander...So I tried making fried balls
INGREDIENTS
Allpurpose flour(Maida)-1cup
Curd-1/4cup
Corn flour-2tbsp
Coriander leaves -1/2cup
Chilly powder or green chillies -2
Asafotida-1/4tsp
Hot oil-1tsp
Oil to fry
Sal to taste
Baking soda-1/2tsp


METHOD:
Mix soda,cornflour and maida.
Grind the chillies,coriander to a coarse paste
Mix oil,salt ,curd and knead it to a slightly watery dough
Drop in hot oil and fry it...
Crispy balls are ready..........

RADISH_CABBAGE SALAD-BM#17

THIS IS THE100th POST >Let me thank all the bloggers who have encouraged me to grow up to 100th postToday is the third  day of  Blogging-Summer salad and since Valli has started anew type of blogging for three days in a week,I have my next schedule on 17th,18th and 19th.
INGREDIENTS:
Shredded Cabbage-1cup
Radish sliced-1/2cup
Tomato sliced-1cup
Pepper powder-1/2tsp
Salt to taste
Olive oil-1tsp
Walnuts-2tsp

METHOD:
Take a wide mouthed vessel and mix the oil, pepper powder and salt.
Add all the cut vegetables,to the above spices
Garnish it with Walnuts!!!
Healthy Salad for weight watchers......

FRUIT SALAD_BM#17

Today is the second day of BM#17... I wanted to try some sweet salad with fruits.During summer after we reach home from work or somewhere else ,we hate to drink coffee,instead can eat cool salad .quenches thirst as well as good for health....
INGREDIENTS
Banana-1
Orange(sweet)-1
Papaya-1cup
Honey-2tsp
Walnuts-2tsp
Raisins-1tsp


METHOD:
Cut all the fruits in to small pieces and mix them all.Garnish with walnutsa dn raisins and cool it 
Wonderful salad  in Summer.....

Thanks to Srivalli giving me an oppurtunity to take part in the blogging marathon after a very long gap.....The theme ,chosen by me is Summer salad
INGREDIENTS:
Green moong sprout(Boiled for two minutes)-1cup
Mango(kilimooku)-1
Carrot-sraped-1
Pepper powder-1/2tsp
Sal to taste
Chat masala-1/2tsp
Ground nuts-roasted and skin removed-2tsp

METHOD:
Mix all the ingredients and serve it.....It makes a tasty and healthy salad as Mangoes are available in Summer and this particular mango has a sweet cum sour taste..So goes very well with the salad

BAKED ONION RINGS_

This is first attempting to bake onion rings as UK Rasoi is hosting From Fried to favourite
INGREDIENTS:
Onions cut in to rings-5
Besan-1/2cup
Rice flour-!/2 cup
Chilly powder-1tsp
Turmeric powder-1/2tsp
Salt to taste
Asafotida 1/4tsp
Oil-2tsp
Rawa-2tbsp


METHOD:
Mix the flour,salt,chilly powder,asafotida and make a thick paste.Dip the onion rings and coat it with rawa
Arrange it on a greased plate and bake it for 15minutes on a high heat....
Crispy onion rings are ready to have abite......

COTTAGE CHEESE POTATO BREAD WITH MINT CHUTNEY_MAGIC MINGLE#5

I am very happy to take part in this  Magic mingle-5 event because,I just wait for the announcement of two magic ingredients and try something new out of it......
INGREDIENTS:
For stuffing:
Cottage cheese scraped-1cup
Boiled potato smashed-1cup
Cumin seeds-1tsp
Garam masala-1tsp
Amchur-1/2tsp
Oil-1tsp
Salt to taste

For chutney
Mint-1cup cut and washed
Coriandercut and washed-1cup
Green chillies-2
Lemon juice-2tsp
Datessoaked in water for 10 minutes-4
Chat masala-1tsp
salt to taste
Bread-slices-2
Butter-1tbsp
METHOD:
First take a kadai,add the oil cumin seeds,when it splutters,add all the masala fry for a minute,then add the cottage cheese,fry for two minutes,finally add the potaoes,keep aside.
Grind all the ingredients together for chutney.
Toast the bread in butter nicely and spread the chutney first and the masala mixture.Cut it and serve it with sauce.
Wonderful dish for kids as well.....

PEANUT CHIKKI_BLOG HOP WEDNESDAY-17

Thanks to Radhika who is hosting this blog hop wednesday-17 for the past so many months and I always take part in it.This time I am paired with Vaishali shabhani,who has a wonderful space.Her bread Gulab jamun was so yummy             and Itried Peanut chikki as everyone likes it
INGREDIENTS:
Roasted and skin removed peanuts-2cups
Jaggery-1cup
Ghee-1tsp
Cardamompowder-1tsp

METHOD:
Take a kadai,add the jaggery,on a slow fire make a thick syrrup.
Testing can be done by adding one drop of this to a cup of water,when it does not stick and makes sound when you drop in the cup,it is done.
Switch off the gas ,add the ghee,peanuts and the cardmom powder.
Transfer it on a greased plate and level it.
Once it is slightly cooled,draw the squares.
Crispy peanut chikki is ready!!!!!

MAGIC MINGLE#4 CARROT_RAISIN BURFI

This month Kalyani had announced the two magic items-Carrot and Raisins.Since it is New year I thought of making a burfi with it.
INGREDIENTS:
Carrot shredded-2cups
Milk powder-1cup
Besan-1/2cup
Raisins-1cup
Butter-1/2cup
Cardamom powder-1tsp
Sugar-21/2cups
Water-1/2cup


METHOD:
Take 1/4cup butter in a kadai,add the carrot,fry till the raw smell goes off,to that add the raisins,fry for a minute,follwed by besan till the raw smell vanishes..Switch off the gas and add milk powder,cardamom powder to it.
Tranfer this in a vessel,add the sugar and water,wait till the sugar dissolves,add the mixture and the remaining butter..
Keepit on a low flame till it leaves the sides of the pan,Transfer this to a greased plate and cut it into pieces after it is cooled.
Yummy Burfis are ready!!!!!!

BLOG HOP WEDNESDAY_16-SPINACH DHOKLA

Thanks to Radhika for hosting this BLOG HOP WEDNESDAYS-16 and I really enjoy taking part in it continuously......This time I am paired with Nayna who has a blog named Simply Food All her recipes are good and i have tried many before we were paired.Today I tried Spinach Dhokla and it turned out very well.Something different from the usual Dhokla.
INGREDIENTS:
Besan-1cup
Rawa-1cup
Spinach(cut and boiled )-11/2cup
Tamrind paste-2tsp
Chilly powder-1tsp
Salt to taste
Sugar-1tsp
Eno salt-11/2tsp
Ajwain seeds -1tsp
Turmeric powder1/2tsp
Water-1cup
For tarka:
Mustard seeds-1tsp
Sesame seeds -2tsp
Red chilly -1
Oil-2tsp

Mix all the ingredients well and finally add the eno salt
Let the batter be like idly batter.
Now steam it by pouring it on a vessel slightly lined with oil
Steam for 15 minutes.and cool it.
Cut it in to desired shape and pour the tarka on it.
Fluffy and tasty Dhoklas are ready to serve.....
