BLOG HOP WEDNESDAY_16-SPINACH DHOKLA

Thanks to Radhika for hosting this BLOG HOP WEDNESDAYS-16 and I really enjoy taking part in it continuously......This time I am paired with Nayna who has a blog named Simply Food All her recipes are good and i have tried many before we were paired.Today I tried Spinach Dhokla and it turned out very well.Something different from the usual Dhokla.
INGREDIENTS:
Besan-1cup
Rawa-1cup
Spinach(cut and boiled )-11/2cup
Tamrind paste-2tsp
Chilly powder-1tsp
Salt to taste
Sugar-1tsp
Eno salt-11/2tsp
Ajwain seeds -1tsp
Turmeric powder1/2tsp
Water-1cup
For tarka:
Mustard seeds-1tsp
Sesame seeds -2tsp
Red chilly -1
Oil-2tsp

Mix all the ingredients well and finally add the eno salt
Let the batter be like idly batter.
Now steam it by pouring it on a vessel slightly lined with oil
Steam for 15 minutes.and cool it.
Cut it in to desired shape and pour the tarka on it.
Fluffy and tasty Dhoklas are ready to serve.....

OATS UPMA-BLOG HOP WEDNESDAY

Thanks to Radhika for hosting this Blog hop wednesdays  week-15and I am a regular participant.This time I am paired with Shree Rao.I went through her wonderful space and was delighted and tried Oats upma for breakfast.Oats in a porridge is a usual one and many dont like it.Some spicy menu is always Tasty.
INGREDIENTS:
Oats-1cup
Onion-1
Ginger paste-1tsp
Green chillies-2
Coconut(optional)-1/4cup
Oil-1tsp
Mustard-1tsp
Bengal gram-1tsp
Cumin seeds-1tsp
Coriander-to garnish
Cashew or groundnuts-1tsp
Salt to taste
Lime juice 2tsp

METHOD:
Fry the oats till it changes it white colour.
Take the oil in a kadai,add the oil,mustard,wait till it splutters,add the bengal gram dal and cumin seeds.
Fry the onion,add the ginger paste and green chillies.
Add 1.5 cups of water,when it boils add salt and the oats and cook till all the water is absorbed.
Take it off the fire and add the lemon juice and garnish with fried cashews and coriander.
Healthy breakfast is ready!!!!

CORN PAROTTA

I am very happy to take part in this Magic-Mingle-3Hosted by Kalyani.It was indeed a wonderful round in the mingle-2 with many mouth watering recipes.This time the two ingredients are corn and wheat.I tried corn parotta iestuffed with corn.It is very healthy as it does not require much oil and all the ingredients  used are very good for health.
INGREDIENTS:
Corn -(soft)variety-1cup(Boiled one)
Onion-1
Tomato-1
Kasuri methi-2tsp
Coriander powder-1tsp
Cumin powder-1tsp
Redchilly powder-1tsp
Vangi bhath powder/garam masala-1tsp
Olive oil-3tsp
For Roti:
Wheat flour-1cup
salt to taste
Water to knead
Salt to taste

METHOD:
Knead the atta in to a smooth dough and leave it for half an hour.
Take a kadai,add one 1tsp of oil,add the onion fry for one minute,add all the ingredients and cook for 3minutes.
Roll the dough in to two rotis and stuff the filling inside and cover it with another roti.Seal the sides with water.
Cook it on a slow flame by adding little oil till both the sides are well cooked.
It goes well even with a cup of curd.
Tasty and  healthy parotta is ready!!!!!

ALMOND MOHANDAL

I am very happy to take part in this magic mingle hosted by Sizzling tastebuds and it was wonderful going through so many entries in the part 1.Now we are heading towards part 2 where the ingredients are ginger and almond.
INGREDIENTS:
Almond-1/2cup
Cashew nuts-1/2cup
Milk powder-1cup
Besan-1cup
Butter-1cup
Ghee-1/2cup
Mawa-1cup
Dry ginger powder-1tsp
Sugar-21/2cup
Some cashews and raisins for garnishing

METHOD:
Fry besan in hot ghee till aroma comes.
Powder cashew,almond coarsely,add to the above besan ,fry for one more minute.
Switch off the gas and add mawa ,milkpowder and ginger powder to it.
In a heavy bottom pan add the sugar,add water till it sinks and make a thick syrup.
Add the butter,stir it till it dissolves completly.
Add the above mixture and stir till it leaves the sides of the vessel in a medium flame.
Transfer it in to a greased plate and make squares when it is slightly cooled down.
Soft and tasty    "MOHANDAL" is ready!!!!!

CRISPY POTATO PORIYAL

This entry goes to Blog hop wednesday-14 hosted by Radhika.This time I am paired with Hema. ,hema'svathangadiI went through her blog.It is wonderful with many recipes.Ichose potato roast aw I had many potatoes in the house.
INGREDIENTS:
Potatoes-3
Chilly powder-2tsp
Mustard-1tsp
Urad dhal-1tsp
Turmeric powder-1/2tsp
Oil-2tsp
Coriander to garnish

METHOD:
Boil the potatoes with some salt and turmeric powder., after cutting in to small pieces in a microsafe vessel for five minutes.
Take a kadai,add the oil ,add mustard allow it to splutter,add the urad dhal and when it turns brown,add the boiled potatoes and the chillypowder,fry till it becomes very crisp in low flame.
Garnish it with coriander leaves.
Wonderful and tasty potato roast is ready to be eaten with rotis or sambhar rice.!!!!!

GROUND NUT BALLS

Myself and my hubby like this ladoo very much,Iwanted to try myself.Long time back I tried this but The jaggery was a fault.
INGREDIENTS:
Ground nut-1cup
Jaggery-1cup
Ghee-1tsp
Water-1/2cup
Cardamom-1tsp(optional)


METHOD:
Since I did not get groundnut with out skin,I removed it by keeping in Microwave for 2minutes.
Take a kadai,add the jaggery and water
Make a thick syrup(Test it by putting in a small plate with water,It will roll well and when you drop in the water it will make a slight sound)
Add the groundnuts and ghee,Make it in to balls while it slightly hot.
Super and healthy groundnut balls are ready!!!!!.

EGGLESS CHOCOLATE CAKE

I baked a cake for my hubby's birthday.It turned out very well.The recipe was from Radhika's tickling palates with a slight variation
INGREDIENTS:
All purpose flour-1cup
Oil-1/2cup
Sugar-1/2cup
Walnuts+raisins-1/2cup
Cocoa powder-1tbsp
Milk-1/4cup
Curd-1/2cup
Baking soda-1/4tsp
Baking powder-1/2tsp
METHOD:
In a bowl mix the oil,sugar,milk,curd and cocoa powder well.
Mix the baking powder and soda to flour well.
Add the flour to the above mixture,add the nuts after rolling with some flour to it so that it will not stick to the bottom and transfer it to a baking tray.
Dust the baking tray with some oil and flour before addding the mixture
Bake it in a microwave convection mode for 35 minutes.
Beautiful and tasty cake is ready!!!!!

GROUNDNUT RICE

Usually on the mattu pongal day we make differnt types of rice.Here is a variation
INGREDIENTS:
Rice-1cup(cooked)
Ground nut-1/4cup(roasted and coarsely powdered)
Coconut powder-2tbsp
Redchillies-3
Asafotida-1/4tsp
Urad dhal-2tsp
Oil-2tbsp
Mustard-1tsp
Urad dhal -1tsp for tempering
Salt to taste

METHOD
Take little oil in a kadai and add the urad dhal,chillies ,coconut and asafotida.Fry till the raw smell goes.
Powder this and add to the groundnut.:
Add the rest of the oil in the kadai,allow the mustard to splutter.add the urad dhal and the powdered masala
Mix it well with the cooked rice.,add the necessary salt.
Tasty ,healthy rice is ready!!!!!.

EGGLESS BANANA BREAD

This entry goes to Dr.Sameena Culinary creation Banana recipes.You have a wondeful space and all the recipes are very good.
INGREDIENTS:
Wheat flour-1cup
Ripe banana-2
Jaggery-3/4cup
Oil-1/4cup
Walnuts-1/4cup(Coarsely powdered)
Cinnamon powder-1/2tsp
Vanila essence-1/2tsp
Baking powder-1/2tsp
Baking soda-1/4tsp

METHOD:
Whip the bananas,jaggery,oil together in a blender
Add the baking powder,soda to the flour.,Mix well.
Mix all together with the walnut,essence etc.
Transfer in a baking dish and in microwave oven,convection mode bake it for thirty minutes
Lovely,soft bread is ready!!!!

SWEET RICE KALI AND KOZHAMBU

This year since we dont have the festivals as someone in the family passed away,I made this today as myself and my hubby likes it a lot.This goes to tickling palates Let's cook rice#11-rice
INGREDIENTS FOR KALI
Raw rice-1cup
Jaggery-1cup
Coconut-1/2cup
Ghee-2tsp
Water-3cups
Cardamom-1tsp
Cashew nuts-3tsp

METHOD:
Fry the rice till it is almost red in colour.Pound it coarsely.
Take the jaggery in a vessel,add 3cups of water and strain all the mud from it.
Once it boils add the rice flour and transfer in to a pressure cooker
Wait for two whistles and fry the coconut and cashew in the ghee.
Mix the cardamom powder,rice mixture and the coconut
Healthy kali is ready!!!!!!Usually we serve this with a kootu.
INGREDIENTS FOR KOOTU
White pumpkin-1/4cup
Red pumpkin-1/2cup
Potato-1
Peas-1/2cup
Corn-1/4cup
Sprouts-1/4cup
Broad beans-1/4cup
Tomato-1
Tamrind paste-1tbsp
Tur dal -1/2cup
TO GRIND:
Coriander seeds-2tsp
Chana dhal-1tsp
Redchillies-5
Coconut-2tsp
Kali rice powder -1tsp
TO TEMPER:
OIL-2tsp
Mustard seeds-1tsp
Urad dal-1tsp
Chana dal-1tsp
Curry leaves-few
Asafotida-1/2tsp
Salt to taste
METHOD:
Cut all the vegetables in to small pieces.Mix all with the tamarind paste,add salt turmeric,pressure cook it for 2whistles.Cook the Dall also separately.
Fry all the masala and grind it well.
Once this mixture is ready ,take a kadai add the oil wait till mustard splutters,add the dhalls and curry leaves.
Pour this in to the cooked vegetabkles,add the ground masala, and boil it for 2minutes.
Very tasty kootu is ready.Goes well with rotis.dosas etc.

PAV BHAJI

I finished Radhika's Blog hop wednesday-First version successfully.Today we start the BLOG hop wednesday second version  -week-13and I am paired with Jyoti Needless to mention about her blog.It has very intersting recipes and I tried a few of them and today posting pav bhaji from hers.
INGREDIENTS
Potatoes-3
Carrot-1
Cauli flower florrets-few
Capsicum-1
Onion-1
Tomatoes-3
Sprouted moong -1cup(used instead of peas)
Red chilly powder-1tsp
Pavbhaji masala-2tsp
Ginger paste-1tsp
salt to taste
Oil-2tsp
butter-2tsp
Coriander- for garnishing
Lemon juice 3tsp

METHOD
Boil potatoes,carrot,cauliflower in a cooker for one whistle.
Take a kadai,add oil, cumin seeds.
After it splutters,add the  choppedonion,capsicum.Fry well,now add the chopped tomatoes and sprouts.
Now add chilly powder,pavbhaji masala powder,fry it well Add salt to taste..To this add the boiled vegetables and smash it well.
Remove from fire add the lemon juice andcoriander leaves
Tasty pavbhaji is ready.Serve it with toasted bread or pav.

METHI BISI BELA

This is my entry to MAGIC MINGLE-1 chillies and cinnamon Thanks to kalyani for hosting this..I tried a different style of bisibela
INGREDIENTS:
Rice-1/2 cup
Tur dal-1/2cup
Methi fresh leaves-1cup
Onion-1 small(cut into small pieces)
Capsicum-1Cut in to small pieces
Cumin seeds -1tsp
Cinnamon powder-1tsp
Redchilly powder-1tsp
Coriander powder-1tsp
Cashew nuts-2tsp
Tamrind juice-1/2cup
Cloves-2
Oil-2tsp
Ghee-2tsp
Salt to taste


METHOD:
Cook the rice and turdal together in a pressure cooker.
Take a kadai,add the oil,ghee,cmin seeds.Wait till it splutters.
Add the cinnamon powder,cloves,coriander powder,chilly powder.Saute for a minute .
Add the onion,fry for some time,then the methi leaves.
Tamrind juice is added to this and cook for some time.
Mix the rice mixture with this and cook for 2minutes.
Tasty,healthy bisi bela is ready!!!!!
Serve it with some raita..

PEAS FRIED RICE

This entry goes to Veena- Veg junction for HLI  peas.and also goes to lunch box ideas hosted by kalyani 
INGREDIENTS:
Green peas(fresh)-2cups
Raw rice(basmati optional)-1cup
Bay leaf-1
Cumin seeds-1tsp
Cloves-1/2tsp
Cinnamon-small piece
Ghee-2tbsp
cashewnuts-2tsp
Raisins-1tsp
Greenchillies-2
ginger paste-1tsp
Coconut milk-2cups
salt to taste

METHOD:
Take a kadai add the ghee,fry all the ingredients from bayleaf to ginger paste for a minute.
Add the peas to it and fry for 2minutes.
Add the washed rice to this and fry for 1minute.
Transfer intoa vessel and add coconut milk and 1/2 cup water,add  the required salt.
Pressure cook for just 2whistles.
Tasty fried rice is ready and mostly children love this compared to sambhar and other items.
Goes well with some curd or raitha.
