DRY FRUIT CAKE

This is my entry for BM#8 Round2 and Day2.The theme is cooking with out fire.The recipe is some what similar to harini's Mixed nut No cook cake.I made some variations .Here goes the recipe:
INGREDIENTS:
Almonds-1cup
Walnut-1cup
Dry coconut -1cup
Cardamom-4
Milk powder-1cup
Sugar-3/4cup
Milk-2tbsp

METHOD:
Take all the ingredients except milk and milkpowder in a blender and pulse it to coarse powder
Transfer it into a dish,Mi9x the milk powder and add drops of milk to make it into a paste.
Spred it on a greased thali'
Freeze it for one hour.
Delicious burfis are ready.
As we all know dry fruits are very good for the health for young and all age groups.
Children will refuse to eat dry fruits but will love to eat burfis.

CARROT- POMEGRANATE SALAD

I am very happy to take part in the BM#8Group2Day1. Thank you Srivalli for hosting this Blogging marathon.I went out of station last week,So opted this week.But saw all the entries It was excellent!!!!My theme is cooking with out fire for four days and three days Microwave cooking.Since I am off to Tirupati by IRCTC one day tour tomorrow,I shall post two entries on thursday.
Here goes the simple recipe:
INGREDIENTS:
Carrot(Shredded)-1cup
Pomegranate pulp-1/2cup
Coriander-for garnishing
Lime-1/2
Salt to taste
Chat masala-1/2 tsp
Green chilly-1


METHOD:
Mix the shredded carrot with salt,chat masala.
Arrange it on a plate.Now spread the pomegrante pulp in the centreand the coriander surrounding it.
Squeeze the lime over it.
Colourful and Healthy salad is ready.
Children will love it.It is good for all age groups ascarrot is very good for eyes and pomegranate is a very good antixidant.

PAV_BHAJI

Here goes the recipe:
INGREDIENTS:
Potato-2
Carrot-1
Bell pepper-1
Peas-1/2cup
Cauliflower-1/2cup
Tomatoes-3
Onion-1
Salt to taste
Butter2tbsp
Cumin seeds-1tsp
Pavbhaji masala-2tsp
Chilly powder-1/2tsp
Ginger paste-1/2tsp
Coriander few for garnishing


METHOD:
Slice the onion into fine pieces.
Take a kadai add butter,cumin seeds and fry the onions .
Add the all the masalas and fry for a minute.
Cut the tomatoes into small pieces and fry them next.
Add the bellpepper(cut finely).Fry for sometime.
Now add the potatoes,carrots,cauliflower and peas.
Let it cook and then smash it slowly.
Very aromatic Pavbhaji is ready.
Serve it with toasted pav.

INSTANT DHOKLA

This is the second week of our" Blog hop wednesday" week-2.I am paired with Santosh's kitchen.The blog is beautiful with so many recipes.I tried some from it already and posting one among it.Here goes the recipe:
INGREDIENTS:
Besan-1/2cup
Curd-1cup
Suji(Rawa)-1/3cup
salt to taste
Eno salt-1packet
For tempering:
OIl-1tsp
Mustard seeds-1tsp
Jeera-1tsp
Curry leaves few
Greenchillies-2
Coriander few
Lemon juice-1tsp
Water1/2cup
Sugar-1tsp

METHOD:
Mix the besan,suji and curd.
Add salt,sugar  and the eno salt
Spread it on a idly mould.
Steam it for 10 minutes and cool it
Cut it into half .
Take a kadai,add oil and mustard.
When it splutters,add the greenchillies,curry leaves,coriander.
Add the lemon juice with some water to it.
This makes the dhokla to remain soft.
Serve it with some mint chutney.

WALNUTS-OATS COOKIES

This entry I am sending to WWC-Oats in baking.I will also link to Sanjeeta's announcement.It is very healthy.
Here goes the recipe:
INGREDIENTS:
Oats-3/4 cup
Wheat flour-1cup
Walnuts(coarsely powdered)-1cup
Sugar-1cup
Oil-1/4cup
Cinnamon powder-1/4tsp
Vanilla essence-1/2tsp
Cooking soda-1/2tsp
Milk-1to2 tsp

METHOD:
Mix all the dry ingredients.
Powder the sugar , add it to the oil and mix well.
Now mix all together to make a dough with little milk.
Shape it to any desired shape and arrange it on the baking tray.
Bake it (Used a convection mode) for 20 minutes at 200degrees and 5 minutes in180 degrees.
Crispy,yummy cookies are ready.

PANCH LEGUME CURRY

Here goes the recipe:
Whole green gram dhall-1/4cup
Black eyed beans-1/4cup
Rajma-1/4cup
Dried green peas-1/4cup
Groundnut-1/4cup
Tomato(Chopped and pureed)-1cup
Turmericpowder-1/2tsp
Redchilly powder-1tsp
Cumin powder-1tsp
Coriander powder-1tsp
Coriander to garnish
Oil-2tsp
Cumin seeds-1tsp
Salt as required

METHOD:
Soak all the dhalls for 4-5 hrs.
Pressure cook them till they are soft.
In a kadai add the oil, cumin seeds and let it splutter.Add the tomatoes and fry till the oil seperates.
Mix all the dry ingredients to it and fry for a minute.
Now add the cooked dhalls and salt,Let it simmer for 10 minutes.
Garnish with coriander
Delicious dhall is ready.

DRY FRUIT POLI

This entry goes to Indian Mithai Mela MMKAll the polis are my favourite especially the one which I made because the stuffing is very interesting and not much ghee and so less fat and not much sweet too. .Here goes the recipe:
INGREDIENTS:
For poli:
Wheat flour-1cup
Maida-1cup
Any oil -4tbsp
Edible yellow colour1/4 tsp
Water to knead.

For stuffing:
Almonds-1/4 cup
Raisins-1/4cup
Chickpea flour1/4cup
Sugar-1/2cup
Cardamom-1tsp

METHOD:
Mix wheat flour,maida and oil well Add some more water to make a soft dough.
Leave it for 2hrs
Coarsely grind all the stuffing ingredients.
Now roll it into a roti.Stuff it with filling and roast it like a roti adding some ghee around.
Tasty  poli is ready!!!!

CRISPY PANEER DOSA

Today is the last day(7) of BM#7.Thanks to Srivalli for hosting this.Thanks to all the blogging marathanors for visiting my blog and giving me the comments....Looking forward for the next marathon.Here goes the recipe for the crispy Dosa
INGREDIENTS:
For dosa:
Rice-1cup
Urad dhal-1/4cup
Tur dhal-1tbsp
salt as required
For stuffing:
Grated paneer-1cup
Boiled peas-1/4cup
Boiled corn-1/4cup
Chilly powder-1/2tsp
Garam masala-1/2tsp(OPTIONAL)
Asafoetida-1/4tsp
oil for Dosa and stuffing2tbsp
salt as required
corn and peas
after adding paneer



METHOD:
Soak rice,uraddhal, turdhal together for 2hrs.
Grind it to a smooth batter.
Take a kadai,add 1tsp of oil,peas and corn ,heat it till the raw smell disappears.
Add all the other dry ingredients and switch off.
Now add the grated paneer and mix it well.(Raw smell of paneer goes off in that heat itself)
Make a dosa and cook it on a low flame till it is crispy.(DONT TURN IT)
Spread the stuffing and serve it with some chutney.
Crispy paneer dosa is ready!!!!.

CRUNCHY POTATO SANDWICH

The time flies!Today is day6BM#7.Wanted to avoid oil so intend making a crunchy sandwich with a potato stuffing.Here goes the recipe:
INGREDIENTS:
Potato-2(Boiled and smashed)
Turmeric powder-1/2tsp
Red chilly powder-1/2 tsp
Garam masala-1/2 tsp
Cumin seeds-1tsp
oil-1/2 tsp
Lemon juice-1/2 tsp
Curry leaves-few.
Salt as required

Bread slices-4
Butter-1tbsp
                                          Potato stuffing
METHOD:
Take the boiled and smashed potato in a vessel
Heat oil in a kadai and add the cumin seeds till it splutters,
Now add turmeric powder,chilly powder,Garam masalapowder,curryleaves to it.
Add the potatoes,salt and switch off the stove.
Squeeze the lemon juice in the potato mixture.
Take the sandwich toaster,apply little butter  to the bread and stuff with potato.
Toast it till it is crunchy.
Bread slices
Final product!!!
Yummy sandwich is ready!!!!

ONION PAKORAS

Today is day5 of BM#7.Usually pakoras are made with rice flour and besan.But I tried with some oats and yellow corn flour.Here goes the recipe:
INGREDIENTS:
Onion(big)-1
Oats-1/2 cup
Yellow corn flour-1cup
Red chilly powder-1tsp
Asafoetida-!/4 tsp
Ghee(melted)-1tsp
salt as required

METHOD:
Chop the onions in to small pieces
Mix all the ingredients well.
Add water slowly so that it becomes a firm dough.
Heat oil in a kadai and drop them in hot oil.
Crispy pakoras are ready to serve.

SWEET APPAM

This entry goes to 4th day of. BM#7 hosted by Srivalli .After making two spicy items ,Iswitched over to a sweet item.It is very easy and healthy.
INGREDIENTS:
Rice flour-1cup
Wheat flour-3/4 cup
Jaggery-1cup
Cardamom powder-1tsp
Ghee-1tsp
Banana(optional)-1(Smashed)
Coconut Powder-1tbsp
Oil for frying

METHOD:
Take the jaggery in a small vessel,add some water and heat it.
Mix all the dry ingredients in another vessel.
Pour the jaggery  water after removing all the dirt from it.
Add the ghee.
The batter should be similar to idli batter(Not very watery)
Use a nonstick appam kadai so that it requires very little oil.
Keep the stove on a low flame and fry both the sides till it is crispy.
Lovely appams are ready!!!!!!

CRISPY MASALA GROUNDNUTS

This entry goes to Srivalli's blogging marathon BM#7 Day3.Ground nuts are very healthy so just thought of adding some masala and cooking in microwave so that very little oil could be used.
INGREDIENTS:
Groundnuts-1cup
Besan(gram flour)-2tbsp
Rice flour-2tsp
Garam masala powder-1tsp
Turmeric powder-1/2 tsp
Chilly powder1/2 tsp
Salt as required
Oil-3tsp

METHOD:
Soak the groundnuts in water for 10to 15 minutes.
Mix all the ingredients to it.
Spread it on a microwave safe plate.
Heat it on high for one minute and remove the lumps and again repeat it till they are crispy.
Super crispy groundnuts are ready.

CRUNCHY PALAK BALLS

First day went off well as I was able to make chennai bloggers taste my cookies!!!Day2of BM#7.After the sweet one I planned to make a spicy one.
INGREDIENTS:
Palak(cut fine)-2cups(spinach)
Gram flour(besan)-1/2 cup
Rice flour-1/2cup
Chilly powder-1tsp
Turmeric powder-1/2tsp
Ghee(melted)-1tsp
Salt as required
Oil for frying

METHOD:
Wash the palak well and mix all the ingredients .
Add water and make it into a soft dough(should be able to make balls)
Roll it in to balls 
Fry in hot oil.
Crispy palak balls are ready.

WALNUT COOKIES

This is the first time that I am taking part in a marathon.Thanks to Srivalli who is hosting it.I have sent many entries to many events like Breakfast mela by Srivalli,Banana by Kirthi's kitchen etc.This entry goes toBM#7and the theme is" Crunchy bites."Being the first day I planned to start with a cookies.
INGREDIENTS:
Walnut(Coarsely powdered)-2cups
Wheat flour-11/2 cups
Raisins-1cup
Oil-1/4cup
Sugar-3/4cup
Cinnamon powder-1/2tsp
Vanila essence-1tsp
Baking soda-1tsp
Milk(as required)

METHOD:
Mix the walnut powder,flour,soda,cinnamon powder and powdered sugar together.
Add the oil and make it in to a dough.
Now add some milk so that we can shape it into cookies.
Arrange it on a tray and bakeit.(I used convection mode in microwaveoven and it took nearly 30 minutes at 220degrees.)
Crispy cookies are ready.

whole wheat flour salt cookies

This entry goes to Tamalapaku event "only baked" and also linking to Pari for the giveaway as i am a regular follwer of both the blogs and also a resident of India.
Ingredients:
Whole wheat flour-1cup
Any oil-3tbsp
Butter-1tsp
salt as required
sugar-1tsp
Cumin seeds-2tsp
Curd-2tsp
Cooking soda-1/2 tsp

Method:
Mix all the dry ingredients and add the butter and the oil knead well till it is a soild dough.If the dough is very dry then add some curd and knead well
Now roll it like a chapathi and cut it into  any desired shape.
Arrange it on a baking tray and bake till it is very crispy.(I used convection mode 210 degrees and baked it for 30 minutes.This may vary)
Cool it and then store it in a airtight container
