SWEET APPAM

This entry goes to 4th day of. BM#7 hosted by Srivalli .After making two spicy items ,Iswitched over to a sweet item.It is very easy and healthy.
INGREDIENTS:
Rice flour-1cup
Wheat flour-3/4 cup
Jaggery-1cup
Cardamom powder-1tsp
Ghee-1tsp
Banana(optional)-1(Smashed)
Coconut Powder-1tbsp
Oil for frying

METHOD:
Take the jaggery in a small vessel,add some water and heat it.
Mix all the dry ingredients in another vessel.
Pour the jaggery  water after removing all the dirt from it.
Add the ghee.
The batter should be similar to idli batter(Not very watery)
Use a nonstick appam kadai so that it requires very little oil.
Keep the stove on a low flame and fry both the sides till it is crispy.
Lovely appams are ready!!!!!!

CRISPY MASALA GROUNDNUTS

This entry goes to Srivalli's blogging marathon BM#7 Day3.Ground nuts are very healthy so just thought of adding some masala and cooking in microwave so that very little oil could be used.
INGREDIENTS:
Groundnuts-1cup
Besan(gram flour)-2tbsp
Rice flour-2tsp
Garam masala powder-1tsp
Turmeric powder-1/2 tsp
Chilly powder1/2 tsp
Salt as required
Oil-3tsp

METHOD:
Soak the groundnuts in water for 10to 15 minutes.
Mix all the ingredients to it.
Spread it on a microwave safe plate.
Heat it on high for one minute and remove the lumps and again repeat it till they are crispy.
Super crispy groundnuts are ready.

CRUNCHY PALAK BALLS

First day went off well as I was able to make chennai bloggers taste my cookies!!!Day2of BM#7.After the sweet one I planned to make a spicy one.
INGREDIENTS:
Palak(cut fine)-2cups(spinach)
Gram flour(besan)-1/2 cup
Rice flour-1/2cup
Chilly powder-1tsp
Turmeric powder-1/2tsp
Ghee(melted)-1tsp
Salt as required
Oil for frying

METHOD:
Wash the palak well and mix all the ingredients .
Add water and make it into a soft dough(should be able to make balls)
Roll it in to balls 
Fry in hot oil.
Crispy palak balls are ready.

WALNUT COOKIES

This is the first time that I am taking part in a marathon.Thanks to Srivalli who is hosting it.I have sent many entries to many events like Breakfast mela by Srivalli,Banana by Kirthi's kitchen etc.This entry goes toBM#7and the theme is" Crunchy bites."Being the first day I planned to start with a cookies.
INGREDIENTS:
Walnut(Coarsely powdered)-2cups
Wheat flour-11/2 cups
Raisins-1cup
Oil-1/4cup
Sugar-3/4cup
Cinnamon powder-1/2tsp
Vanila essence-1tsp
Baking soda-1tsp
Milk(as required)

METHOD:
Mix the walnut powder,flour,soda,cinnamon powder and powdered sugar together.
Add the oil and make it in to a dough.
Now add some milk so that we can shape it into cookies.
Arrange it on a tray and bakeit.(I used convection mode in microwaveoven and it took nearly 30 minutes at 220degrees.)
Crispy cookies are ready.

whole wheat flour salt cookies

This entry goes to Tamalapaku event "only baked" and also linking to Pari for the giveaway as i am a regular follwer of both the blogs and also a resident of India.
Ingredients:
Whole wheat flour-1cup
Any oil-3tbsp
Butter-1tsp
salt as required
sugar-1tsp
Cumin seeds-2tsp
Curd-2tsp
Cooking soda-1/2 tsp

Method:
Mix all the dry ingredients and add the butter and the oil knead well till it is a soild dough.If the dough is very dry then add some curd and knead well
Now roll it like a chapathi and cut it into  any desired shape.
Arrange it on a baking tray and bake till it is very crispy.(I used convection mode 210 degrees and baked it for 30 minutes.This may vary)
Cool it and then store it in a airtight container

OATS DOSA

I am a resident of India staying at Chennai.I looked for spelt but was not available.So i made a healthy breakfast with Oats.
INGREDIENTS:
Oats-1cup
Rice flour-1/2 cup
Rawa or Semolina-1/4 cup
Greenchillies-2
Coriander and curry leaves few
Ginger paste-1tsp
Salt to taste.
oil for making dosa

METHOD:
Soak the oats and rawa for half and hour.
Grind it to a smooth paste with the rice flour.
Add the green chillies,salt,and the coriander and curry leaves also while grinding.
Now spread it on a dosa tawa like a rawa dosa,just smear little oilaround it.  Crispy and lovely breakfast or brunch is ready to serve!!Serve it with some chutney.

EGGLESS BANANA BREAD

I am very glad to take part in this event as Banana is a very important fruit which supplies full nourishment, vitamins and lot of carbohydrates.It serves us like a food if sometimes we are hungary.Mostly the young infants are asked to give banana as it gives strength.So i tried a banana bread .
INGREDIENTS:
Wheat flour-11/2 cups
Banana(slightly ripen)-3
Sugar-1cup
Saffola oil-1/2 cup
Baking soda-1tsp
Salt-1/4 tsp
Walnuts and Raisins-1/2 cup

METHOD:
Mash the bananas well either in a blender or with a smasher.
In a pan cream the oil and sugar well.
Mix the flour ,salt,soda well.
Mix all the three slowly and add the nuts to it.
Bake it  in a baking vessel ( microwave oven in a convection mode) for 45 minutes.(Adjust according to your oven) at 240 degrees.
Yummy banana bread is ready to serve!!!

MYSORE RASAM

This is a archieve from http://archguru.blogspot.com/2011/04/mysore-rasampaavakai-kari-day-7.html.I have tried many of your recipes and all turned out to be very good.Today the rasam has turned out to be very tasty.Hope my husband enjoys it in the lunch.Hope to see some more interesting recipes!!!!

INGREDIENTS:
Toor dall-1/2 cup
tomato-1
Turmeric powder-1tsp
tamrind paste-11/2tsp
salt to taste
Jaggery-1tsp(OPtional)

TOgrind:
Coriander seeds-2tsp
cumin seeds-1tsp
pepper-1tsp
Redchillies-2-3
Curry leaves few
Asafoetida-1/2tsp
Dry coconut powder-1tsp
To temper
Mustard seeds -1tsp
Cumin-1tsp
Ghee-2tsp

Method:
Pressurs cook the dall up to 3-4 whistles.Make it a smooth paste
In a pan add all the ingredients to fry and powder it
Add the tamrind paste,turmeric powder,salt and tomato(puree) in a  pan and boil it for 5 minutes.
Add the ground masala and the dall
Add the ghee in a frying pan,add the mustard and cumin till it splutters,
Add this to the rasam
Super and tasty rasam is ready to serve with rice.

EGGLESS OATMEAL RAISIN COOKIES

This is taken from "Kirthi's kitchen"No need to say about this blog.I see she is posting daily one new recipe and i have tried many of her recipes.

Ingredients:
Quaker oats:11/2 cups
Maida          :1/2 cup
Raisins         :1/4 cup
Soda            :1/2 tsp
Sugar          :1/4 cup
Oil               1/2 cup(Iused oil instead of butter)
Milk            :2tsp




Method
Mix maida and soda together well in a bowl.
Cream the oil and sugar well in another bowl.
Add the raisins,oats,maida mixture and whisk it well.
The dough was very dry.So added 2tsp of milk to make it a solid dough.
The dough is arranged in a baking tray
This is baked in microwave oven in the conventional mode around 240degrees
Bake it till the corners are browned and crispy.
My oven took about 25 minutes to bake.

Lovely crispy and healthy cookies were ready

RAGI_IDIYAPPAM

INGREDIENTS:
Ragi flour:1cup
Boiling water:Nearly 2cups
Salt-to taste

METHOD:
Fry the ragi flour till it gives a nice aroma in a slow flame.
Add salt to it
Add the boiling water till it becomes a solid dough.
Leave it for 2 minutes and then knead it to a smooth dough.
Squeeze it through a omapodi or idiyappam press.
Stem it till it is done.
Serve it with stew or chutney orany sambhar.
Lovely healthy idiyappam is ready.
This can be eaten by all age groups.For children it can be dressed with some grated coconut etc.

Carrot-Almond kheer

INGREDIENTS:
Carrot-2
Almonds -1/2cup
Milk-2cups
Sugar-1cup
Sunflower seeds for garnishing.
Cardamom 1/2 tsp
Ghee-1/2 tsp

METHOD:
Take one cup of milk,add the sliced carrots and the almonds in a pressure cooker.
Allow just two whistles and turn it off.
After cooling the mixture grind it smoothly in a blender.
Add the remaining milk,sugar and simmer it for 5 minutes.
Frythe sunflower seeds in ghee,add the cardamom to the mixture
Refrigerate it.
Wonderful cool  kheer is ready!!!!!

PORICHA KOYAMBU

INGREDIENTS:
Toor dal-1/2 cup
Bottle gourd(cut into pieces)-1cup
Turmeric powder-1/2 tsp
Curry leaves few
Salt to taste
Asafoetida-little
To Grind:
Coconut-2tbsp
Redchillies-2
Cumin seeds-1tsp
Mustard seeds:-1tsp
Urad dal-1tsp
Oil-1tsp

METHOD:
Pressure cook the toor dal well in to a smooth paste.Take a kadai ,add the oil.to it add the mustard and urad dal.Let it splutter.Add the bottle gourd pieces,turmeric,salt,asafoetida and let it cook till it is soft.Grind the coconut,cumin and the redchillies.Add this to the mixture,add the cooked toordal Now garnish it with the curry leaves.Hot poricha koyambu is ready.It tastes well with rice or chappaties.

SPINACH PANEER

Ingredients:
Spinach-1cup(Washed and cut)
Paneer   1/2 cup
Coriander powder-1tsp
Chilly powder-1tsp
Garam masalapowder-1tsp
Chat masala-1/2 tsp
Ginger paste -1tsp
Onion-1/2 cup(Chopped finely)
Tomatoes -2
Salt to taste
Butter-1tbsp
Cumin seeds-1tsp
Coriander for garnishing.


   

                                                               



  Method:
First slice the paneer in to small pieces , add the chat masala and leave it for 10 minutes.In the mean time add the butter in a frying pan , add the cumin seeds .Fry the onions till it is slightly brown in colour.Take the paneer in a microwave oven proof dish .Leave it in the microwave in high for5 minutes with stirring in between.Having the onions turned brown add the chilly powder,garam masala,and the coriander powder and fry for two minutes.Put the tomatoes in a blender and make a puree of it.Now add the tomato puree and fry till the water evaporates completly.Add the spinach and let it boil for 10 minutes till it is soft and done.Add the paneer pieces and simmer it for 2 minutes.Add the coriander and serve it with naan or rice.

EGGLESS OAT MUFFIN

This entry goes to Breakfast club #13 and anyone can cook series 24
Ingredients:
Wheat flour-1cup
Oat flour-1cup(Powder the oats in a blender)
Sugar     -1/2 cup
Baking soda-1tsp
Raisins    1/2 cup
Almonds 1/4cup
Curd-      2tbsp
Milk      3/4cup
oil        3tbsp
Orange juice 1tsp
Salt    1/4 tsp






Method:
Mix the wheat flour,oat flour,baking soda and salt well.Now take another bowl and mix the curd,milk,oil,sugar,orange juice well.Mix both the mixture very slowly and add the raisins and coarsely powdered almonds.Pour it in a baking tray and bake it for 20 minutes (250degrees) in convection mode.Healthy,yummy muffins are  ready!!!


This goes to the event anyone can cook as the ingredients are daily items and the method is very simple.The time taken is 30 minutes.Preparing time 10minutes and  the baking time 20minutes.All the beginners can easily follow it
