EGGLESS OATMEAL RAISIN COOKIES

This is taken from "Kirthi's kitchen"No need to say about this blog.I see she is posting daily one new recipe and i have tried many of her recipes.

Ingredients:
Quaker oats:11/2 cups
Maida          :1/2 cup
Raisins         :1/4 cup
Soda            :1/2 tsp
Sugar          :1/4 cup
Oil               1/2 cup(Iused oil instead of butter)
Milk            :2tsp




Method
Mix maida and soda together well in a bowl.
Cream the oil and sugar well in another bowl.
Add the raisins,oats,maida mixture and whisk it well.
The dough was very dry.So added 2tsp of milk to make it a solid dough.
The dough is arranged in a baking tray
This is baked in microwave oven in the conventional mode around 240degrees
Bake it till the corners are browned and crispy.
My oven took about 25 minutes to bake.

Lovely crispy and healthy cookies were ready

RAGI_IDIYAPPAM

INGREDIENTS:
Ragi flour:1cup
Boiling water:Nearly 2cups
Salt-to taste

METHOD:
Fry the ragi flour till it gives a nice aroma in a slow flame.
Add salt to it
Add the boiling water till it becomes a solid dough.
Leave it for 2 minutes and then knead it to a smooth dough.
Squeeze it through a omapodi or idiyappam press.
Stem it till it is done.
Serve it with stew or chutney orany sambhar.
Lovely healthy idiyappam is ready.
This can be eaten by all age groups.For children it can be dressed with some grated coconut etc.

Carrot-Almond kheer

INGREDIENTS:
Carrot-2
Almonds -1/2cup
Milk-2cups
Sugar-1cup
Sunflower seeds for garnishing.
Cardamom 1/2 tsp
Ghee-1/2 tsp

METHOD:
Take one cup of milk,add the sliced carrots and the almonds in a pressure cooker.
Allow just two whistles and turn it off.
After cooling the mixture grind it smoothly in a blender.
Add the remaining milk,sugar and simmer it for 5 minutes.
Frythe sunflower seeds in ghee,add the cardamom to the mixture
Refrigerate it.
Wonderful cool  kheer is ready!!!!!

PORICHA KOYAMBU

INGREDIENTS:
Toor dal-1/2 cup
Bottle gourd(cut into pieces)-1cup
Turmeric powder-1/2 tsp
Curry leaves few
Salt to taste
Asafoetida-little
To Grind:
Coconut-2tbsp
Redchillies-2
Cumin seeds-1tsp
Mustard seeds:-1tsp
Urad dal-1tsp
Oil-1tsp

METHOD:
Pressure cook the toor dal well in to a smooth paste.Take a kadai ,add the oil.to it add the mustard and urad dal.Let it splutter.Add the bottle gourd pieces,turmeric,salt,asafoetida and let it cook till it is soft.Grind the coconut,cumin and the redchillies.Add this to the mixture,add the cooked toordal Now garnish it with the curry leaves.Hot poricha koyambu is ready.It tastes well with rice or chappaties.

SPINACH PANEER

Ingredients:
Spinach-1cup(Washed and cut)
Paneer   1/2 cup
Coriander powder-1tsp
Chilly powder-1tsp
Garam masalapowder-1tsp
Chat masala-1/2 tsp
Ginger paste -1tsp
Onion-1/2 cup(Chopped finely)
Tomatoes -2
Salt to taste
Butter-1tbsp
Cumin seeds-1tsp
Coriander for garnishing.


   

                                                               



  Method:
First slice the paneer in to small pieces , add the chat masala and leave it for 10 minutes.In the mean time add the butter in a frying pan , add the cumin seeds .Fry the onions till it is slightly brown in colour.Take the paneer in a microwave oven proof dish .Leave it in the microwave in high for5 minutes with stirring in between.Having the onions turned brown add the chilly powder,garam masala,and the coriander powder and fry for two minutes.Put the tomatoes in a blender and make a puree of it.Now add the tomato puree and fry till the water evaporates completly.Add the spinach and let it boil for 10 minutes till it is soft and done.Add the paneer pieces and simmer it for 2 minutes.Add the coriander and serve it with naan or rice.

EGGLESS OAT MUFFIN

This entry goes to Breakfast club #13 and anyone can cook series 24
Ingredients:
Wheat flour-1cup
Oat flour-1cup(Powder the oats in a blender)
Sugar     -1/2 cup
Baking soda-1tsp
Raisins    1/2 cup
Almonds 1/4cup
Curd-      2tbsp
Milk      3/4cup
oil        3tbsp
Orange juice 1tsp
Salt    1/4 tsp






Method:
Mix the wheat flour,oat flour,baking soda and salt well.Now take another bowl and mix the curd,milk,oil,sugar,orange juice well.Mix both the mixture very slowly and add the raisins and coarsely powdered almonds.Pour it in a baking tray and bake it for 20 minutes (250degrees) in convection mode.Healthy,yummy muffins are  ready!!!


This goes to the event anyone can cook as the ingredients are daily items and the method is very simple.The time taken is 30 minutes.Preparing time 10minutes and  the baking time 20minutes.All the beginners can easily follow it

Thank you award


MIXED FRUIT MILK SHAKE



Ingredients:
Papaya pulp-1/2 cup
Mango pulp-1/2cup
Seedless grapes(few)
Milk         -2cups
Almonds--1/4cup
Rose milk essence-5drops
Sugar        1/4 cup

Method:     
Take the papaya pulp,mango pulp and the grapes Blend it in a mixer to a smooth paste with some milk.Add the sugar and the remaining milk and churn it well.Add the rose milk pink essence.To garnish powder the almonds coarsely and refrigerate it.The milk shake is very attractive because of the pink colour and excellent taste.It is a very tasty drink for summer ..

MOONG DHAL DOSA


Ingredients:

Moong dhall-(green one)-1 cup
Rice                               -!tbsp
Green chillies                  -2
Cumin seeds                   -1tsp
Coriander leaves few
Salt to taste
Ginger asmall piece


Method:
Soak the dhall and rice for 3 to 4 hrs.Grind this to a coarse batter While grinding add the green chillies.ginger,salt and the coriander leaves.Now add the cumin seeds.and make the batter not very thin slightly thick..Now pour it on a tawa and smear some oil.Moong dhall crispy dosa is ready.

IDIYAPPAM and STEW

This entry goes to Srivalli's breakfast mela 2011 .This is a very simple and healthy one .It does not have any oil at all and a steamed one too.Here goes the recipe:

Ingredients for idiyappam:
Raw rice flour-1cup
boiling water
salt


Method:
  • Fry the rice flour just for five minutes on a slow fire so that it becomes little fluffy(we can put rangoli)Add required salt.
  • Add the boiling water so that it becomes a stiff dough.
  • Leave it for two minutes and by just sprinkling little cold water make it a smooth dough.
  • Squeeze it through the omapodi vessel or if you have the wooden idiyappam naazhi on a idli stand and steam it for ten minutes.The healthy idiyappam is ready to serve.

Ingredients for stew:
Onion-1
Tomato-1
Coconut milk-2cups
Green chillies -4(according to spicy level)
 salt to taste                        

Method:
Slice the onions  and split  the green chillies .Add  one cup of water and boil it till it becomes transparent and soft Now add some salt to taste.. Add the tomato slices and continue boiling for more 5 minutes.Now simmer the gas and add the coconut milk .Switch off the gas.The stew is ready to serve.

SAGO MURUKKU_SRIVALLIs ICC CHALLENGE

This is the first time i am taking part in this challenge.I am working as a teacher which i have resigned for some personal reason.So i am free to take part in all this challenges.Last was my mcc challenge where i made almond burfi.
It is so nice to go through so many srivallis recipe and i have tried a few of them.The diabetic recipes are very useful as my husband is on the border line.
So here goes the recipe for murukku as given by Srivalli
Ingredients:
Rice flour-2cups
Besan     -1/2 cup
Pottukadalai flour-1/2cup
sago soaked in curd1/4cup-1/2 cup(for three hours)
Oil for frying and 50 gms oil for the dough.
Salt and chilli powder.
Method;
Take the rice flour,besan and channa flour and make a hole in the center of the bowl pour the hot oil.Now add the sago soaked in curd and knead it to a dough like the chapattidough by adding the water.
Take the murukku achhu and fry it in hot oil.Lovely and crispy murukku............

DOUBLE LAYERED BURFI


Ingredients:
Milk powder-4cups
Maida-3/4 cup
Sugar-21/2cups
(since i used amulya milk powder i used only 21/2 cups other wise you can add 51/2 cups of sugar)
Cashew and Pista powdered -11/2 cups
Water 3/4 cup
Cocoa powder-1/2 cup
Ghee-1cup

Method:
  • Fry the maida in ghee till the raw smell vanishes.
  • Add the milk powder,nuts to this.
  • In another vessel make a thick syrup of sugar and then add this contents to this.
  • Now i transferred 3/4 in to a microwave vessel and microwaved for 3 min.
  • Leave it to cool By the time add the cocoa powder to the remaining mixture and microwave it for 2 min.
  • Now spread the white layer on a greased thali and spread the chocolate one on the top.Let it cool and then cut it into the desired shapes.

    CASHEW_PISTA BURFI

    Ingredients:
    mava -200gms                                               
    cashew-1/2 cup(powdered)
    pista-1/2cup(powdered)
    sugar-1cup
    (powdered)
    cardamom-1/2 tsp
    ghee-2tbsp
    green colour,yellow colour

    Method:
    Add mava and ghee in a micro safe vessel and microwave it for2min.Add sugar and cardamom and microwave it for 2more min.Divide the mixture in to two parts.To one add the cashew powder and yellow colour microwave it for 3min.Cool the mixture .Add the remaining mixture,pista and green colour and microwave it for 3 min.After cooling knead it like roti atta and spread it into a greased thali.On the top add the pista mixture and cool it and cut in to the desired shape.

    DOODH PEDA

    I tried a milk peda and here is the recipe.

     

    Ingredients:
    Milk maid-1 tin                                       
    Milk powder-2cups                                                            
    Butter        - 4tbsp
    Cardamom-1tsp                                                                                        
    Saffron ptional
    Method:
    Actually this is a recipe from my daughter archana..We wanted to make it for my son when i visited her in US We did not have butter so instead we added ghee.But it turned out be some other ladoo not peda.
    Take the milkmaid in a micro safe vessel and heat it for 2 minutes.Add the butter and microwave it for 1 min.Now add the milk powder till it becomes thick and microwave it for three minutes.Cool it well and then you shape it into a ball slightly flattened in the middle and you can just press pista cashew or raisin for decoration.
